Roast Chicken with Underskin Stuffing

Crispy skin roast chicken with our favourite Granny stuffing under the skin, giving a boost of flavour with every mouthful!

  • 1 whole Chicken Skin on
  • 100 g Granny Stuffing Mix
  • 100 ml Water
  • 1 75-95g Chicken Sausage Squeezed out of skin
  • 3-4 tbs Bundaberg Spice Company Outback Red to coat


  • Preheat oven to 180°c
  • Combine Granny Stuffing Mix, Water and Sausage meat mixing well
  • Wearing gloves, run fingers between chicken skin and meat to separate and create a pocket for stuffing. Stuff mixture into the pocket between the breast and thigh meat and pat down to even out mixture
  • Liberally sprinkle Outback Red on outside of skin and oven bake at 180°c for 30 minutes per 500gm. Occasionally baste with oven juices
